BLUE CORN FRIED OYSTER PO BOY

INGREDIENTS

  • Oysters
  • Hoagie Rolls
  • Canola Oil
  • Cilantro
  • Red Pepper
  • Scallions
  • Chopped Cabbage
  • Julienned Carrots

CHIPOTLE DRESSING

  • Canned chipotles
  • Cilantro
  • Extra virgin olive oil
  • Whole grain mustard
  • Garlic

GREEN CHILI TARTER SAUCE

  • Tartar Sauce
  • Lime Juice
  • Green Chilis

BLUE CORN BREADING

  • 3 cups Blue Corn Flour
  • 1 TBSP Old Bay Seasoning
  • 1 TBSP Granulated Garlic
  • 1 TBSP Granulated Onion

DIRECTIONS

  1. Assemble chipotle dressing, green chili tartar sauce, and breading.
  2. Drain oysters.
  3. To assemble slaw, mix chipotle dressing, cilantro, red pepper, scallions, cabbage, and julienned carrots in a large bowl.
  4. Coat oysters in blue corn breading.
  5. Fry oysters in canola oil for 1 ½ – 2 minutes.
  6. To assemble your sandwich, cut a pocket into your hoagie roll. Add in green chili tartar sauce, oysters, and chipotle slaw.
  7. Pick, slice, and enjoy!
