October is flounder season here on the southern Outer Banks and we’re excited to share a delicious way to make flounder ceviche! This recipe will make several tostadas and serve 4-6 people.

Ingredients

1.5 lbs Flounder diced

1 c lime juice to soak the flounder (or six limes)

Salt and pepper to taste

2 diced jalapeños

1 Tbsp Cilantro chopped

1 local tomato diced

2 additional limes for the ceviche

1/8 cup of minced red onion

Corn tortillas fried in olive oil

Slaw from the market

1 Tbsp sour cream

½ avocado sliced

First, you’ll want to get started by soaking your flounder in lime juice, salt and pepper for at least 12 hours. Once finished soaking, remove the lime juice that the flounder soaked in and then add two diced jalapeños, cilantro, the juice of two fresh limes and a half tsp of salt to the mixture. Stir together. Add your minced red onion to the mixture and stir.

To build the tostada, you’ll begin with two fried corn tortillas and place them on a plate on top of each other. Add some of the ceviche and slaw from the market. Top with a Tbsp of sour cream and garnish with avocado slices. Repeat the tostada build for each person who will be enjoying the ceviche with you. Garnish with some cilantro! Enjoy!
