Shrimp & Tasso Ham

Shrimp and Tasso Ham
Yields 4 Servings

  • 20 Local Shrimp
  • C. Diced Tasso Ham
  • 1 Red Pepper Diced
  • 1 Yellow Pepper Diced
  • 1 Orange Pepper Diced
  • 2-4 Shallots Sliced
  • 1-2 T. Tomato Chutney
  • 1 C. Chicken Stock
  • 1 C. Heavy Cream
  • 2 T. Butter
  • ½ C. Fresh Parsley Leaves
  • ½ C. Fresh Basil Leaves

Sauté the Tasso ham in butter. Add peppers, shallots and tomato chutney. Cook 1-2 minutes. Add shrimp, chicken stock and cream and reduce by half. Add fresh herbs and serve.

This can be served over rice or pasta. To make into a casserole, place in an oven safe dish, top with bread crumbs and cheese, dot with butter and bake until golden brown.

*Tasso Ham: lean, highly seasoned pork that is served in the southern United States and most often associated with Cajun cuisine. It is made into a spicy ham, sometimes referred to as Cajun ham, having a peppery outer skin that has been heavily smoked.
